Reservations release on Resy at 10 AM, 31 days out. This is the primary path and for most people the only path. Be signed into Resy before the minute turns. Have your party size, date, and time preference ready. Do not browse first.
Weekday availability is slightly better than weekends, particularly in summer. If your date is flexible, aim for Tuesday through Thursday dinner or any weekday lunch.
Carbone serves lunch daily and it is the easiest path to a table at this restaurant. Lunch reservations are released on the same schedule: 10 AM, 31 days out. Competition is lower and availability lasts longer after the drop. If you can do lunch, book lunch.
Walk-ins at lunch are technically possible but not reliable. The Infatuation puts it plainly: they've heard it might work but wouldn't risk it at dinner. Lunch gives you better odds but this is not a walk-in restaurant.
