Jean-Georges Vongerichten opened his eponymous restaurant at 1 Central Park West in 1997 and it has held four New York Times stars and two Michelin stars ever since. The dining room was designed by Thomas Juul-Hansen with floor-to-ceiling windows overlooking Central Park and Columbus Circle. Chef de Cuisine Joseph Rhee leads the kitchen in Vongerichten's absence, sustaining a menu that abandons traditional cream and stock in favor of vegetable juices, fruit essences, and light broths informed by Vongerichten's years cooking across Asia.
