Thomas Keller opened Per Se in 2004 as his New York interpretation of The French Laundry, and it has held three Michelin stars since the inaugural New York guide in 2006. The nine-course chef's tasting menu and vegetable tasting menu are both $355 before upgrades, with a 2,000-bottle wine list that has earned the Wine Spectator Grand Award annually. The room overlooks Central Park and Columbus Circle, the service is precisely choreographed, and the kitchen treats classical French technique as a foundation rather than a constraint. Oysters and Pearls has been on the menu since opening and has never needed to leave. Tock drops on the first of the month for two months out.
