Chef Shigeyuki Tsunoda relocated from Ginza to build an eight-seat omakase counter in the Flatiron around an 800-pound half-moon piece of unfinished wood, sanded daily. One Michelin star. The cocktail den Shinji sits at the front, and the beverage program, vintage Champagne and rare sake bottles not found elsewhere, is treated with the same seriousness as the food. Tsunoda's cuts are confident and unhurried, the rice is warmed, the fish is pristine. Two seatings nightly at 5:45 and 8:45 PM. Tock drops at 11 AM, 30 days out.
