Crown Shy Reservations

Jassimran Singh, who grew up in Old Delhi and trained in Melbourne before running Crown Shy from its 2019 opening, now leads the kitchen in James Kent's absence. The room alone is worth the reservation: ground floor of the landmarked Art Deco tower at 70 Pine Street, soaring ceilings, marble floors, a long bar. The cooking is approachably creative New American: bhatura with white bean hummus, pork katsu with curry béarnaise, char siu lamb shoulder. Resy, 10 AM, 28 days out.
