Takuma Watanabe, longtime head bartender at the late Angel's Share, runs this three-level Japanese-style cocktail lounge in a 19th-century Gramercy carriage house. The cocktails are served in custom-made glassware and executed with the shokunin spirit that defines Watanabe's approach.
