Chef Junichi Matsuzaki trained at Sushi Yasuda before becoming second in command at Sushi Noz on the Upper East Side, where he spent years under Chef Nozomu Abe. Noz 17 is the downtown sibling: a seven-seat Hinoki cypress counter in Chelsea designed in the Sukiya style of traditional Japanese tea houses, with cedar aromas and warm lighting that slow everything down. One Michelin star. The 15-course omakase moves through seasonal nigiri and otsumami with a focus on Edomae tradition and fish imported from Japan.
