Masahiro Urushido opened Katana Kitten at 531 Hudson with Cocktail Kingdom's Greg Boehm and James Tune, reaching No. 10 on the World's 50 Best Bars in 2021 without importing the precision-and-silence format of Ginza. The shiso gin and tonic pours from draft under a shiso leaf, the Hinoki Martini arrives in a masu box, and Urushido is often behind the bar himself. Walk-in only.
