Chef Sungchul Shim trained at Per Se, Le Bernardin, and Bouley before opening Kochi in Hell's Kitchen in late 2019, his first solo project. Kochi means skewer in Korean, and the eight-course tasting menu leans into it: wagyu with kimchi dressing, soy-braised abalone with shrimp pancake, octopus glazed in gochugaru.
