About
Massimo Laveglia, born in Pistoia, Tuscany, opened L'Industrie in Williamsburg in 2017 on a long-fermented dough made with Italian and Hudson Valley flours, thin and blistered in the New York style with toppings imported from Italy. The burrata slice comes with two full dollops of cold burrata over hot crust with fruity olive oil; the pepperoni runs in quarter-size pork-forward discs that cup and crisp at the edges. There is always a line. Walk-in only.
