Chef Yuu Shimano founded this Greenpoint restaurant around a single idea: French cuisine expressed through a Japanese sensibility. One Michelin star. The 18-seat dining room operates with a theatrical opening: lights dim, curtains pull back, the kitchen team stands at attention in stark whites. What follows is a lengthy tasting menu that moves between light and indulgent: smoked surf clam with celeriac, abalone risotto with nori powder, a duck and foie pastry that feels like it arrived from another era. The warehouse space is impressive in scale and carefully tended. 36 covers per day. Tock drops at midnight on the 1st of the month for two months out.
