Ignacio Mattos opened this Houston Street bistro in 2013 and it has been influencing New York cooking ever since. One Michelin star. The menu of shareable plates is built on unexpected combinations that feel inevitable in retrospect: ricotta dumplings with mushrooms, arroz negro with squid and hazelnuts, the beef tartare with sunchoke that has been on the menu since opening and shows no signs of leaving.
